{"id":14323,"date":"2020-05-16T12:21:42","date_gmt":"2020-05-16T16:21:42","guid":{"rendered":"https:\/\/manselldesign.ca\/ProbusORGtoRedesign\/?p=14323"},"modified":"2020-05-16T12:24:32","modified_gmt":"2020-05-16T16:24:32","slug":"spicy-coconut-grilled-chicken-thighs-by-peggy-sturch","status":"publish","type":"post","link":"https:\/\/manselldesign.ca\/ProbusORGtoRedesign\/spicy-coconut-grilled-chicken-thighs-by-peggy-sturch\/","title":{"rendered":"Spicy Coconut Grilled Chicken Thighs &#8211; by &#8211; Peggy Sturch"},"content":{"rendered":"<h3>1 3\u201d piece fresh ginger<\/h3>\n<h3>5 garlic cloves<\/h3>\n<h3>\u00be cup coconut milk<\/h3>\n<h3>\u00bc cup hot chili paste<\/h3>\n<h3>\u00bc cup fresh lime juice<\/h3>\n<h3>2 tbsp light brown sugar<\/h3>\n<h3>1 tbsp salt<\/h3>\n<h3>2 tbsp vegetable oil<\/h3>\n<h3>2 lbs skinless, boneless chicken thighs<\/h3>\n<h3>\u00bd cup cilantro leaves<\/h3>\n<h3>lime wedges<\/h3>\n<h3><\/h3>\n<h3>Finely grate ginger and garlic into a medium bowl. Add coconut milk, chili paste, lime juice, brown sugar, salt and 2tb oil. Whisk to combine. Add chicken and toss to coat. Let sit for up to 4 hours.<\/h3>\n<h3><\/h3>\n<h3>Remove chicken from marinade, letting excess drip back into bowl, and transfer to a rimmed baking sheet. Pour marinade into a saucepan. Bring to a boil, then reduce heat to medium low and simmer, stirring occasionally until slightly reduced and thick enough to coat the back of a spoon. (3-4 minutes)<\/h3>\n<h3>Clean and generously oil grate of grill. Grill chicken, turning once and basing occasionally with marinade, until you see some good grill marks and chicken is cooked through, 8 \u2013 10 minutes.<\/h3>\n<h3><\/h3>\n<h3>Transfer chicken to a platter. Brush with remaining marinade.
